Profiteroles de chocolate

Ingredientes

Para 4 personas

  • *6 cl milk
  • *6 cl water
  • *1 pinch of salt
  • *50 g butter
  • *70 g flour
  • *12 g cocoa
  • *125 g eggs
  • *20 g flaked almonds
  • *50 cl chocolate ice cream
  • *75 g plain chocolate
  • *7 cl milk

Instrucciones

*Preheat the oven to 200°C.

*Pour the water, milk, butter and salt into the mixer bowl with the kneading/crushing blade attachment. Lock the lid with the cap and set on speed 2 to 90°C for 8 minutes.

*Add the flour and cocoa, lock the lid with the cap and set on speed 4 for 2 minutes.

*Put the dough into a salad bowl and wash the mixer bowl with cold water to cool it down.

*Put the dough back into the mixer bowl with the kneading/crushing blade attachment. Lock the lid without the cap and set on speed 5 for 2 minutes while adding the eggs one by one through the opening in the lid.

*Line a baking tray with baking paper. Put the mixture into a piping bag and pipe small piles of the mixture onto the baking tray.

*Bake for 20 minutes at 200°C.

*Cut the chocolate into pieces. Cook the almonds in a frying pan without oil to roast them.

*Put the chocolate and milk into the mixer bowl with the kneading/crushing blade attachment. Lock the lid with the cap and set on speed 4 to 60°C for 5 minutes. Scrape the sides, lock the lid with the cap and set on speed 6 for 1 minute.

*Cut the choux buns in half with a serrated knife, fill them with ice cream and cover with chocolate sauce. Sprinkle flaked almonds on top and serve.

*Check that the dough is completely dry before adding the eggs, as this will allow the choux buns to rise well.
