Muffins de boniato y espinacas

Ingredientes

Para 4 personas

  • *100 g flour
  • *5 g baking powder
  • *1.5 tablespoon of sesame oil
  • *125 g soy yoghurt
  • *200 g sweet potato
  • *100 g fresh spinach
  • *1 teaspoon of roasted cumin seeds
  • *1 teaspoon of curry powder
  • *1 tablespoon of pumpkin seeds
  • *Salt, pepper

Instrucciones

*Peel the sweet potatoes and cut them into pieces. Put them into the steamer basket and pour 0.7 L of water into the mixer bowl. Lock the lid with the cap and set on the P1 Steam programme for 20 minutes.

*Once cooked, empty the water from the bowl.

*Preheat the oven to 180°C.

*Put the sweet potato into the mixer bowl with the kneading/crushing blade attachment. Lock the lid with the cap and set on speed 10 for 1 minute.

*Add the flour, baking powder, sesame oil, yoghurt, spinach, cumin, curry powder, salt and pepper. Lock the lid with the cap and set on the P3 Pastry mode for 3 minutes and 40 seconds.

*Pour the mixture into a muffin tin, sprinkle with pumpkin seeds and bake for 18 minutes.
