Flores de patata con avellana


Para 4 personas

  • *600 g of mashed potatoes
  • *50 g butter
  • *3 egg yolks
  • *10 g melted butter
  • *30 g crushed hazelnuts
  • *Sea salt


*Peel the potatoes and cut them into large pieces.

*Put 0.7 L of water into the mixer bowl. Lock the lid and place the steamer on top. Put the potatoes into the steamer. Lock the lid with the cap and set on the P1 Steam for 30 minutes.

*Empty the water from the bowl. Attach the beater accessory and add the potatoes to the bowl. Lock the lid with the cap and set on speed 6 to 90°C for 8 minutes.

*Add the butter, egg yolks and sea salt, then set on speed 6 for 30 seconds.

*Preheat the oven to 180°C.

*Line a baking tray with baking paper.

*Pour the mixture into a piping bag with a fluted nozzle. Pipe small roses onto the baking tray.

*Brush the Duchess potatoes with melted butter. Sprinkle with crushed hazelnuts, then bake for 20 minutes until they start to turn golden.


*Drain the potatoes well, as you need to obtain a very dry purée.
